Handwashing Transparency in Restaurant Reopening
Coronavirus’s training of the public in pathogen transmission has created an added factor in assessing restaurant quality, the hand hygiene factor. They expect to see hand sanitizers readily accessible and used frequently by staff and guests.
Handwashing by kitchen staff in the prep areas and their handwashing restroom behaviors are out of sight and a matter of training and trust.
Back-of-house supervision must now motivate and monitor staff handwashing compliance. They will have to convince their customers, and ideally verify staff handwashing, in order to renew the brand-fragile trust factor.
Handwashing verification is a job for 24/7 electronics rather than valuable, already overburdened, shift supervisors.
